Roasted Asparagus

Roasting asparagus is easy and elegant. Here's how

  • Ingredients:
  • 1 lb fresh asparagus
  • Olive oil (good quality, extra virgin)
  • Sea salt, kosher salt, or ordinary salt
  • Optional: fresh lemon juice, lemon wedges.

  Oven 375
 
Cut or snap off tough asparagus ends. Wash asparagus and dry. Place on cookie sheet. Sprinkle with olive oil and sea salt if you have it, if not, regular salt will do. Cook at 375 for 15 - 20 minutes until the asparagus shrinks and browns on the edges. Or, if you are already cooking something at 350, you can roast the asparagus with it. The cooking time depends on the thickness of the asparagus. The best method to tell if it is done is to taste an asparagus stalk to see if it is cooked through. If you have a lemon, you can squeeze lemon juice on top and serve with lemon wedges.
